For block freezing, the blocks are put into a metal tray and then placed into a multiple-compression freezer. Freezing time maximum of 40- 50 seconds and the product's internal temperature is reduced to at least -50 degrees F at the thermal center after thermal stabilization.

Upon removal of the blocks from the plate freezer, the blocks are taken out of the tray and packed.
